Recipe ingredients
- 2 Tbsp.(30 mL) (flour*
- 3 eggs*
- 1 ¾ cups (430 mL) milk
- 2 Tbsp. (30 mL) butter*
- 1 cup (250 mL) sliced button mushrooms
- 1 cup (250 mL) pieces of oyster mushrooms
- 1 cup (250 mL) cherry tomatoes, halved
- 2 zucchini, sliced in rounds
- 1 garlic clove, chopped
- 1 Tbsp. (15 mL) chopped fresh rosemary
- To taste salt and freshly ground pepper
- ½ cup (125 mL) shredded Oka cheese
- ½ cup (125 mL) shredded Saint-Augustin cheese
Preparation
Preheat oven to 400°F (200°C).
In a bowl, beat flour, eggs and milk until smooth. Set aside. In a frying pan, melt butter over medium heat and cook mushrooms, cherry tomatoes and zucchini until golden.
Add garlic and rosemary, and continue cooking for 1 minute. Salt and pepper to taste.
In a gratin dish, arrange vegetable mixture and pour batter over top.
Sprinkle cheeses evenly over quiche.
Bake for about 30 minutes or until golden.
