Recipe ingredients
- 1 lb. 5 oz. (600 g) ground Québec pork
- 3 shallots, chopped fine
- 2 garlic cloves, minced
- 1 egg*
- 2 Tbsp. (30 mL) chopped fresh parsley
- 2 Tbsp. (30 mL) Irresistibles orange juice*
- ⅓ cup (80 mL) breadcrumbs*
- 3 Tbsp. (45 mL) homemade or commercial cranberry sauce
- ¼ cup (60 mL) grated Parmesan
- Salt and freshly ground pepper to taste
Preparation
Preheat oven to 400°F (200°C).
In a bowl, combine ground pork with remaining ingredients except cranberry sauce and Parmesan. Season.
Shape into 2-in. (5-cm) patties and put a little cranberry sauce in the centre of each.
Fold the sides up and over into a ball.
Roll the balls in Parmesan and place on a cookie sheet lined with parchment paper.
Cook meatballs for 12 – 15 minutes.
Serve with homemade or store-bought Dijonnaise for dipping.
