Recipe ingredients
- 36 Quebec green beans
- ½ lb. (225 g) d’Antan white cheese or cream cheese
- 2 Tbsp. (30 mL) minced fresh chives
- Salt and freshly ground pepper to taste
- 4 wheat flour tortillas, tomato or plain*
- 6 oz. (180 g) Irresistibles smoked salmon*
- 1 small Quebec red onion, thinly sliced
- 2 Quebec tomatoes, sliced
- Irresistibles extra virgin olive oil* as needed
- Fleur de Sel or Maldon Sea Salt or Guérande Salt to taste
Preparation
Cook the green beans in salted boiling water for 5 – 6 minutes or until tender-crisp.
Drain and immerse in ice water. Drain again.
In a small bowl, mix cheese and chives thoroughly. Season.
Lay tortillas on work surface. Divide the cheese among the four tortillas and spread to the edges. Lay nine beans on the near side of the tortilla and the smoked salmon in the centre.
Lay red onion rings over the salmon and roll tortillas up.
Cut tortillas on a diagonal and serve with sliced tomatoes drizzled with olive oil and seasoned with freshly ground pepper and gourmet salt.
