Recipe ingredients
- 3-3½ pound (1,3 kg-1,6 kg ) chicken breasts
- ¼ cup (60 mL) Irresistibles extra virgin olive oil *
- 2 large sweet onions cut into 1-inch (2,5 cm) pieces
- (ex. Vidalia, yellow, red)
- 2 Rio Star Grapefruit, sectioned
- 1 cup (250 mL) white wine
- ½ cup (125 mL) brown sugar*
- 1/3 cup (80 mL) grapefruit juice, reserved from sectioning
- ¼ cup (60 mL) chopped fresh parsley
- 6 minced garlic cloves
Preparation
In large skillet, heat oil. Sprinkle chicken with salt and pepper. Cook chicken on medium-high heat, skin side down, about 4 minutes or until browned.
Place chicken in shallow roasting pan. Add onions and grapefruit. Combine wine, brown sugar, grapefruit juice, parsley and garlic. Pour over chicken. Bake 30 minutes or until chicken is fully cooked.
