Recipe ingredients
- 4 medium whole-wheat pitas*
- Irresistibles olive oil*, as needed
- 3 Tbsp. (45 mL) tomato paste*
- 2 tsp. (10 mL) Irresistibles olive oil*
- 3 chili peppers, seeded and chopped
- 2 garlic cloves, crushed
- 1 lb. (450 g) uncooked deveined, shelled shrimp
- 1/2 each red and yellow peppers, in strips
- 2 Tbsp. (30 mL) shredded mozzarella
- 2 Tbsp. (30 mL) chopped fresh basil
Preparation
Preheat oven to 350°F (180°C).
Place pitas on a baking sheet, brush with oil and spread with tomato paste.
In a skillet, heat oil over medium heat, add chilli peppers and garlic and cook, stirring, for 1 minute.
Add shrimp and cook for 3 minutes or until they start turning pink.
Top pitas with red and yellow pepper strips, sprinkle with cheese and finish with shrimp, chilli pepper and garlic.
Bake for some 15 minutes or until pitas brown and cheese melts.
Sprinkle with fresh basil and serve.
