Recipe ingredients
- 1 lb. (450 g) boneless lamb shoulder, cubed
- 16 oz. (440 mL) Guinness
- ½ celeriac, cubed
- ¼ green cabbage, cut into pieces
- 12 pearl onions, peeled
- 2 carrots, cut into pieces
- 2 cobs of corn, cut into pieces
- 5 cups (1.25 litres) water
- 2 Tbsp. (30 mL) vegetable oil*
- 2 Irresistibles bay leaves*
- 1 sprig thyme
- Salt and pepper to taste
Preparation
In a stew pot, brown cubed lamb in hot oil.
Deglaze with Guinness and then add remaining ingredients.
Bring to a boil, adjust seasoning. Turn heat down to lowest setting and simmer covered for about 1 hour.
