Cherimoya Mousse

Recipe ingredients
- 2 Tbsp. (30 mL) water
- 3 Tbsp. (45 mL) sugar*
- 2 gelatin sheets inflated in cold water
- 10 oz (295 g) cherimoya
- 2/3 cup (150 mL) 35 % whipping cream*
Preparation
Reduce to a purée cherimoya in a blender. Mix the sugar, water and bring to a boil. Mix well until the sugar dissolved.
Remove from heat and add the gelatin until completely dissolved. Mix well.
Add a purée and gently fold into the whipped cream with a spatula
Pour the mousse into the dessert goblets. Refrigerate at least 2 hours before serving.
