Recipe ingredients
- 1 red pepper, cut in julienne strips
- 1 yellow pepper, cut in julienne strips
- 1 orange pepper, cut in julienne strips
- 1 green pepper, cut in julienne strips
- 1/2 red onion, cut in julienne strips
- 1 container, 4 oz (125 g) pure goat milk feta cheese cubes
- 4 Tbsp. (60 mL) Irresistibles Mezzo olive oil
- 2 Tbsp. (30 mL) Irresistibles rosemaryflavoured white wine vinegar
- 4 basil leaves, chopped
- Irresistibles freshly ground pepper to taste
Preparation
In a salad bowl, place julienned peppers and red onion and add cheese cubes.
Add olive oil, rosemary-flavoured white wine vinegar and chopped basil.
Arrange salad on serving plates and garnish with basil leaves.
Suggestion
To remove skin from peppers, cut in half or in quarters.Remove heart and seeds from peppers before slicing.
Brush skin with oil and place, skin side down, on a cookie sheet.
Blacken in the oven for approximately 10 minutes at 230 °C (450 °F).
Air bubbles will form beneath the skin, which can then be easily removed.
