Recipe ingredients
- 1 egg yolk*
- 1 Tbsp (15 mL) Irresistibles Dijon mustard
- 1 Tbsp (15 mL) white vinegar*
- 1 cup (250 mL) Irresistibles extra virgin olive oil
- 1 tsp. (5 mL) lemon juice or vinegar*
- 1 pinch Irresistibles Cayenne pepper or 3-4 drops of harissa sauce
- To taste salt and pepper
Preparation
In a bowl, whisk together egg yolk, mustard, vinegar, salt, and pepper.
Add the oil slowly in a thin stream and whisk without stopping.
Stretch out mayonnaise with a little bit of lemon juice or vinegar.
Verify the seasoning then add cayenne pepper.
If mayonnaise is too thick, add a bit of cold water.
Always keep mayonnaise in the refrigerator and use it within 72 hours.
Many different types of oil, canola, sunflower or peanut, can be used.
