Recipe ingredients
- 4 tomatoes, cut into large dice
- 1 can (19 oz/540 mL) chick peas*, drained and rinsed
- 1 cup (250 mL) chopped fresh parsley
- 1 cup (250 mL) chopped cucumber
- 6 green onions, sliced
- 1 cup (250 mL) cubed Swiss cheese*
- Dressing
- 1/3 cup (80 mL) Irresistibles extra virgin olive oil*
- 3 Tbsp. (45 mL) Irresistibles white wine vinegar*
- 1 large clove garlic, crushed
- 1 tsp. (5 mL) Irresistibles dried tarragon leaves*
- ¼ tsp. (1 mL) salt
- ½ tsp. (2 mL) dry mustard*
- ¼ tsp. (1 mL) freshly ground pepper
- Pinch Irresistibles Cayenne pepper**
Preparation
Salad
In large bowl, combine chick peas, parsley, tomatoes, cucumber, onions and cheese.
Dressing
Whisk together oil, vinegar, garlic and seasonings.
Toss dressing with salad ingredients.
Cover and refrigerate for several hours.
Suggestion
For a change, replace Swiss cheese with feta, mozzarella, Cheddar or Monterey Jack.* We recommend Selection and Irresistibles products.
