Recipe ingredients

  • 2 shallots, thinly sliced
  • 2 tsp. (10 mL) Irresistibles extra virgin olive oil*
  • 1 lb (450 g) Irrresistibles shelled medium shrimp*
  • 1/3 lb (165 g) sugar peas, trimmed
  • 2 pears, cut into 1-inch (2.5 cm) wedges
  • 3 Tbsp. (45 mL) dry white wine
  • 1 Tbsp. (15 mL) unsalted butter*
  • 2½ to 3 Tbsp. (37-45 mL) fresh orange juice
  • To taste salt and pepper

Preparation

In a large skillet, cook the shallots in the olive oil over moderate heat for 3 minutes.
Add the shrimp, sugar peas, pears, and wine and cook 4 minutes, stirring occasionally, until the shrimp is almost done.
Add the butter and orange juice and cook 1 minute.
Season with salt and pepper and serve immediately.
