Recipe ingredients
- 1 egg yolk
- 1 Tbsp. (15 mL) Irresistibles Dijon mustard*
- 1 Tbsp. (15 mL) white vinegar*
- 1 cup (250 mL) Irresistibles extra virgin oil*
- 1 Tbsp. ( 15 mL) lemon juice or vinegar
- 1 pinch Irresistibles Cayenne pepper or 3-4 drops of hot pepper sauce (ex Harissa)
- Salt and pepper to taste
Preparation
In a bowl, whisk together egg yolk, mustard, vinegar, salt, and pepper.
Add the oil slowly in a thin stream and whisk without stopping.
Stretch out mayonnaise with a little bit of lemon juice or vinegar. Verify the seasoning then add cayenne pepper. If mayonnaise is too thick, add a bit of cold water.
Always keep mayonnaise in the refrigerator and use it within 72 hours.
Many different types of oil, canola, sunflower or peanut, can be used.
