Recipe ingredients
- 4 cups (1 L) milk
- ½ cup (125 mL) white roux, cooled
- Salt and white pepper
- ½ tsp. (2 mL) ground nutmeg
- ½ onion
- 2 cloves
Preparation
Heat milk in saucepan and add the white roux gradually in small quantities using a whisk.
Season with salt, white pepper, and ground nutmeg. Prick the clove into the onion and add it into the pan.
Cook on low heat or in oven to 160 °C (325 °F) for 15 to 20 minutes.
Drain through a sieve and adjust seasoning if necessary. Set aside until needed.
Suggestion
To avoid a skin from forming on the top of the sauce, add a little bit of butter on the surface or cover it with plastic film.* We recommend Selection and Irresistibles products.
