Recipe ingredients

  • 4 cups (1 L) milk
  • ½ cup (125 mL) white roux, cooled
  • Salt and white pepper
  • ½ tsp. (2 mL) ground nutmeg
  • ½ onion 
  • 2 cloves 

Preparation

Heat milk in saucepan and add the white roux gradually in small quantities using a whisk. 
Season with salt, white pepper, and ground nutmeg. Prick the clove into the onion and add it into the pan. 
Cook on low heat or in oven to 160 °C (325 °F) for 15 to 20 minutes. 
Drain through a sieve and adjust seasoning if necessary. Set aside until needed.

Suggestion

To avoid a skin from forming on the top of the sauce, add a little bit of butter on the surface or cover it with plastic film.
