Recipe ingredients
- 1 Tbsp. (15 mL) Irresistibles extra virgin olive oil*
- 2 cups (500 mL) chopped onion
- 2 tsp. (10 mL) Irresistibles ground cumin*
- 1 tsp. ( 5 mL) Irresistibles paprika*
- 1 tsp. ( 5 mL) ground turmeric
- ¼ tsp. (1 mL) salt
- ¼ tsp. ( 1 mL) Irresistibles ground cinnamon*
- ¼ tsp. (1 mL) Irresistibles ground ginger*
- 2 garlic cloves, minced
- 2 – 4 cups (500 mL – 1 L) leftover turkey, cut into bite-sized pieces
- 2 cups (500 mL) Irresistibles chicken broth*
- 1 cup (250 mL) cubed peeled butternut squash
- 1/3 cup (80 mL) halved plain green olives
- 8 pitted prunes, chopped
- Fresh parsley leaves (optional)
Preparation
Heat oil in a Dutch oven over medium heat.
Add onion and cook 8 minutes or until golden, stirring occasionally.
Stir in spices, salt, garlic and turkey. Cook 1 minute, stirring constantly.
Stir in broth, squash, olives, and dried plums, and bring to a boil.
Cover, reduce heat to medium-low, and simmer 10 minutes or until squash is tender.
Garnish with parsley, if desired.
Serve with couscous.
