Recipe ingredients
- 3 cups (750 mL) coarsely chopped cabbage
- 1/2 cup (125 mL) grated carrots
- 1/2 cup (125 mL) chopped leek
- 2 Tbsp. (30 mL) butter*
- 5 cups (1.2 litres) Irresistibles Life Smart beef broth*
- 5 cups (1.2 litres) Irresistibles Life Smart chicken broth*
- 1 Tbsp. (15 mL) herbes salées (salted herbs )
- 1 Tbsp. (15 mL) chopped parsley
- Salt and pepper to taste
- 1 tsp. (5 mL) whole allspice*
- 3 whole cloves
- 1/2 lb. (225 g) sliced Parma ham for garnish
Preparation
In a stockpot over medium-low heat, cook cabbage, carrots and leek in butter for 15 minutes, stirring often.
Add beef and chicken broth, herbes salées and parsley.
Bring to a boil and season. Simmer, half-covered, for 1 hour.
Preheat oven to 350°F (180°C).
Line a broiler pan with parchment paper. Lay ham on top and bake until crisp.
To serve, spoon soup into bowls and crumble ham over top.
