Recipe ingredients
- 1 medium English cucumber, peeled
- 1 medium carrot, peeled
- ½ red pepper, cut into julienne
- 1 shallot, minced
- 2 green onions, minced
- 1/2 cup (125 mL) coarsely chopped fresh coriander
- 1/2 cup (125 mL) coarsely chopped fresh basil
- ½ cup (125 mL) diced (¼-in./½-cm.) pineapple
- 4 Italiano cooked cold-smoked tuna steaks
- Dressing
- 3 Tbsp. (45 mL) coconut milk
- 2 Tbsp. (30 mL) fresh lime juice
- 1 Tbsp. (15 mL) Irresistibles extra virgin olive oil or toasted sesame seed oil*
- 1/2 tsp. (2 mL) hot pepper paste
- Salt and freshly ground pepper to taste
Preparation
Using a peeler, shave cucumber and carrot lengthwise into long thin strips.
Put the shaved vegetables in a salad bowl along with the other ingredients, except for the tuna and dressing ingredients.
In a small bowl, whisk dressing ingredients together. Set aside.
Cut tuna steaks into strips ½ in. (1 cm) thick.
Just before serving, drizzle salad with dressing and top with smoked tuna strips.
