Recipe ingredients
- 4 trout fillets with skin
- 2 tsp. (10 mL) each Irresistibles olive oil* and butter*
- To taste Irresistibles sea salt*
- Lemon-coriander mayonnaise
- 2/3 cup (170 mL) Irresistibles mayonnaise*
- 1/ 3 cup (85 mL) finely chopped fresh coriander
- 1 tsp. (5 mL) grated lemon zest
- 1 Tbsp. (15 mL) fresh lemon juice
- 1 tsp. (5 mL) Irresistibles Dijon mustard*
- To taste freshly ground Irresistibles black pepper*
Preparation
In a heavy frying pan, heat the oil and butter over medium heat.
Place the trout fillets skin side down, and cook until the meat becomes opaque.
Do not turn as they cook.
Mayonnaise lemon-coriander
In a bowl, mix all the ingredients well.
Cover and refrigerate until ready to serve.
Serve the trout fillets with the mayonnaise, a few sprigs of coriander, and steamed broccoli florets.
