  • 4 RED PEPPERS
  • 1 Tbsp. VEGETABLE OIL
  • 1.5 ONION
  • 14 oz. MUSHROOMS
  • 1.5 TOMATOES
  • 14 oz. GROUND BEEF
  • 3 EGG WHITES
  • 4 MOZARELLA CHEESE SLICES
  • SALT
  • PEPPER

Preparation

Wash peppers, cut off tops and remove seeds and ribs. Cook peppers in boiling salted water for 5 minutes. Drain, dry and reserve. Heat oil in a medium saucepan. Sauté onion (finely chopped) until tender. Add tomatoes (peeled, seeded and chopped)and mushrooms (previously chopped). Mix. Add ground meat and cook until liquid is evaporated. Add egg whites(cooked and chopped) and season with salt and pepper. Stuff peppers with the meat mixture, and place them on a baking pan. Place a mozzarella slice on top. Bake at 350 °F (180 °C) until hot and mozzarella cheese is melted.
