Recipe ingredients
- 500 mL (2 cups) frozen peas
- 200 g Saputo pearl bocconcini cheese, drained
- 30 mL (2 Tbsp.) basil, finely chopped
- 1 clove garlic, minced
- 45 mL (3 Tbsp.) flour
- salt and pepper to taste
- 375 mL (1 1/2 cups) sesame seeds
- 30 mL (2 Tbsp.) oil
- 60 mL (4 Tbsp.) teriyaki sauce
- 10 mL (2 tsp.) ginger, minced
- 10 mL (2 tsp.) honey
- 60 mL (4 Tbsp.) lemon juice
- 5 mL (1 tsp.) sesame oil (optional)
- 1 pork loin, cooked, cooled and cubed
- Teriyaki sauce to taste
Preparation
In a small saucepan, cover the peas with salted water and boil for 3 minutes. Drain and purée in a food processor.
In a mixing bowl, combine the pea purée, pearl bocconcini, basil, garlic and flour. Mix well and season with salt and pepper.
Shape into 12 patties and coat well with sesame seeds.
In a skillet, fry the patties in oil for 2 minutes on each side until golden.
Combine the oil, teriyaki, ginger, honey, lemon juice and sesame oil (if using) to make the dressing.
For your bento, arrange a cocktail skewer of pork next to a few pea patties then drizzle a generous spoonful of dressing over everything.
Suggestion
These patties are cute, tasty and easy to make ahead of time. Use any cold meat you have on hand, or even fried tofu or sautéed mushrooms if you’re cooking for vegetarians.All rights reserved © Saputo inc. 2010
