Recipe ingredients
- 2 170 g (6 oz) cans tuna, drained
- 4 green onions, chopped
- 125 mL (1/2 cup) canned artichoke hearts, well drained and patted dry
- 80 mL (1/3 cup) mayonnaise
- 30 mL (2 Tbsp.) parsley, chopped
- 10 mL (2 tsp.) freshly squeezed lemon juice
- Salt and freshly ground pepper to taste
- For the sandwiches
- 4 panini buns
- 8 slices Saputo sliced swiss cheese
- Sliced black olives to taste
- Pickled hot peppers, drained to taste
Preparation
In a bowl, combine all the ingredients for the filling and refrigerate. Preheat a Panini grill.*
Assemble the panini, dividing the filling, cheese, olives and peppers among the sandwiches.
Grill until the panini are well marked and the cheese is melted, about 3 minutes.
Cut in half before serving.
Suggestion
If you don’t have a panini grill, use a stove-top grill pan. Preheat it over medium heat for 6 minutes. Place 2 panini at a time in the pan, adding a weight to press them down. Cook until the grill marks show, then turn the sandwiches over and cook until the cheese is nicely melted.All rights reserved © Saputo inc. 2010
