Recipe ingredients

  • 6 oz (185 g) Catelli Healthy Harvest Whole Wheat Spaghettini (about 1/2 box)
  • 1/2 cup (125 mL) fat-free sour cream
  • 1/3 cup (80 mL) grated Parmesan cheese
  • 1/4 cup (60 mL) each finely chopped fresh dill, parsley and green onion or chives
  • 1 1/2 tsp (7 mL) finely grated lemon zest
  • 1/4 tsp (1 mL) each salt and pepper
  • 2 cloves garlic, minced

Preparation

Prepare the spaghettini according to package directions. Reserve 3/4 cup (180 mL) cooking water; drain well and keep warm. Meanwhile, stir the sour cream with the Parmesan, dill, parsley, green onion, lemon zest, salt, pepper and garlic.
Return the spaghettini to the pot and set over medium-low heat. Toss the pasta with the sour cream mixture. Add 1/2 cup (125 mL) reserved pasta water or as needed to achieve a saucy consistency. Taste and adjust pepper as needed. Serve immediately.
This fast and tasty pasta recipe is a better choice than packaged side-dish selections that are typically high in sodium. Creamy whole wheat pasta, accented with fresh herbs and lemon is the perfect accompaniment for fish, but it can also pair well with roasted chicken or pork chops.

Tips:
Serve this creamy side dish with pan-roasted or baked fish such as salmon, tilapia or sole along with steamed vegetables for a well-balanced dinner.
Add a handful of frozen peas during the last few minutes the pasta is cooking.
