Recipe ingredients
- 4 x 5 oz/140 g) fresh salmon fillets
- 2 Tbsp. (30 ml) olive oil
- Freshly ground black pepper
- 1 cup (250 ml) CAMPBELL'S® Ready to Use 25% Less Sodium Chicken Broth
- 3 Tbsp. (45 ml) balsamic vinegar
- 1 Tbsp. (15 ml) cornstarch
- 1 Tbsp. (15 ml) brown sugar
- 1 Tbsp. (15 ml) orange juice
- 1/2 tsp. (2 ml) grated orange peel
Preparation
Sprinkle salmon fillets with olive oil and pepper and grill over medium heat until fish flakes and juices run clear.
Combine broth, vinegar, cornstarch, brown sugar, orange juice and orange peel in small saucepan. Heat to a boil over medium-high heat. Cook and stir until mixture boils and thickens. Simmer for 2 minutes.
Place salmon fillets onto a platter and serve with glaze.
Suggestion
When grating citrus fruits you'll want to avoid rubbing too deeply into the peel. There's a white layer between the outer peel and the flesh, called the pith, which can be bitter.* We recommend Selection and Irresistibles products.
