Recipe ingredients
- 1¼ cup (300 mL) V8 V-Plus® High Fibre Vegetable Cocktail
- 1/4 cup (60 mL) extra virgin olive oil
- 1/4 cup (60 mL) apple cider vinegar
- 2 Tbsp. (30 mL) honey
- 2 Tbsp. (30 mL) lime juice
- 1/2 tsp. (2 mL) garlic salt
- 1/2 tsp. (2 mL) ground black pepper
- Salad
- 1 x 226 g mixed salad greens, chilled
- 2 x 170 g tuna, packed in water, drained
- 1 can (540 mL) white (navy) beans, drained & chilled
- 1 cup (250 mL) halved cherry tomatoes, chilled
- 1 small English cucumber, cut into ribbons, chilled
Preparation
Mix all dressing ingredients (except for V8® cocktail) in a blender. Gradually add V8® cocktail. Refrigerate.
Toss salad greens with tuna, beans, cherry tomatoes and cucumber.
Pour 3/4 cup (180 mL) dressing just before serving.
Suggestion
Keep unused dressing refrigerated and use within 3 days. Drizzle dressing over your favourite salad or serve on-the-side for those who like to choose how much to use.* We recommend Selection and Irresistibles products.
