Recipe ingredients
- 3/4 cup (180 mL) cranberry puree
- 1/4 cup (60 mL) barbecue sauce *
- 1/4 cup (60 mL) light corn syrup *
- 1 tsp. (5 mL) sharp mustard *
- 1/2 tsp. (2 mL) ground ginger
- 1 pinch ground cloves
- 4 x 4 oz (125 g) boneless pork loin cutlets
- 1 onion, cut in rings
Preparation
Preheat the oven to 180ºC (350ºF).
In a small saucepan, mix the cranberry puree, barbecue sauce,
corn syrup, mustard, ginger and cloves well.
Simmer on low heat, stirring about 5 minutes until the sauce is well blended.
Place the cutlets in an oven dish and cover them with onion rings.
Grill the cutlets, turning them once and brush them with sauce
until the pork is cooked.
Serve with diced mixed vegetables.
