Veal Cutlets with Lime Juice

Recipe ingredients
- 1/4 cup (60 mL) lime juice
- 3 Tbsp. (45 mL) vegetable oil *
- 1 Tbsp. (15 mL) honey *
- 4 veal cutlets
- 1 tsp. (5 mL) ground black pepper
- 1/2 chopped, onion
- 1 diced, green pepper
- 1 tsp. (5 mL) cornstarch *
- 1 tsp. (5 mL) water
Preparation
In a glass dish, mix the lime juice, 30 mL (2 Tbsp.) of vegetable oil and the honey. Add the cutlets and marinate in the refrigerator for 30 minutes.
Heat the rest of the oil in a large skillet. Brown the veal cutlets 1 minute on each side. Set aside.
Sautee the onion and pepper 4 to 5 minutes.
Pour in the marinade, bring to a boil and simmer 15 minutes. Season.
Thin the cornstarch with water and add to the mixture. Stir until thickened.
Put the cutlets back in the skillet and heat 2 minutes.
Serve with rice and zucchini. Garnish with lime wedges and fresh parsley.
Suggestion
To maintain the meat’s tenderness anddelicate flavour, brown it in the skillet
on medium and not on high heat.
