Recipe ingredients
- 1 lb. (450 g) cubes of shoulder lamb
- 1 green pepper, in chunks
- 2 red apples, cut in eight
- Marinade
- 1/2 cup (125 mL) white wine
- 1/4 cup (60 mL) Irresistible extra virgin olive oil*
- 1/4 cup (60 mL) orange juice*
- 1/4 cup (60 mL) fresh lemon juice
- 1 Tbsp. (15 mL) chopped onion
- 3 Tbsp. (45 mL)chopped fresh mint or 1 Tbsp. (15 mL) Irresistible dried mint *
- 1 Tbsp. (15 mL) grated zest of orange
- 1/8 tsp. (0.5 mL) Irresistible ground cinnamon *
- 1/8 tsp. (0.5 mL) Irresistible ground ginger*
Preparation
Mix all marinade ingredients in a bowl.
Add the cubes of lamb and marinate in the fridge at least 8 to 12 hours, turning from time to time.
Preheat barbecue to high temperature.
Thread the cubes of lamb on 4 brochettes, alternating with chunks of pepper and apple.
Put brochettes on the oiled grill and cook 4 to 6 minutes per side.
Serve with orange mint rice and salad with yoghurt dressing.
