Recipe ingredients

  • 1/2 lb. (225 g) fresh scallops
  • 1/2 lb. (225 g) fresh shrimp
  • 1 medium size zucchini, cut in chunks
  • 2 red onion, cut in segments
  • Marinade
  • 1/4 cup (60 mL) vegetable oil *
  • 2 Tbsp. (30 mL) Irresistible lemon juice*
  • 2 Tbsp. (30 mL) chopped fresh parsley
  • 1 tsp. (5 mL) Irresistible dried thyme*
  • 1 Tbsp. (15 mL) orange zest
  • 1 clove garlic, minced

Preparation

Prepare 4 brochettes, alternating ingredients. Place in glass dish and set aside.
Mix marinade ingredients in a bowl, pour over brochettes and refrigerate for 2 hours.
Preheat barbecue to medium heat.
Remove brochettes from marinade and drain well.
Place brochettes in grill basket and cook on grill for 2 to 3 minutes, turning frequently.

Suggestion

When buying fresh shelled scallops, make sure that the flesh is firm and odourless.
