Recipe ingredients
- 1 cup (250 mL) water
- 2 cups (500 mL) sugar
- 1 Tbsp. (15 mL) zest of orange
- 3 Tbsp. (45 mL) orange juice*
- 1/4 cup (60 mL) lemon-flavoured jelly powder
- 4 cups (1 litre) pumpkin, cubed
- 3 whole star anise.
Preparation
In a pan, bring water to a boil with sugar, zest and juice of orange.
Sprinkle on the gelatine and stir until fully dissolved.
Add pumpkin and anise.
Simmer 20 to 25 minutes until the pumpkin cubes become transparent.
Suggestion
Raw pumpkin freezes well. Cut in cubes before freezing to save space.Occasion: Brunch
