Recipe ingredients

  • 2/3 lb. (250 g) frozen cooked shrimp* thawed
  • 2/3 lb. (250 g) fresh cooked scallops
  • 1 cup (250 mL) grated old cheddar cheese*
  • 4 scallions, chopped
  • 1 tsp. (5 mL) lemon juice
  • 1/3 cup (80 mL) 1% plain yoghurt *
  • 1/2 tsp. (2 mL) ground black pepper.
  • 2 x 1/2 lb. (225 g) prepared puff pastry

Preparation

Preheat oven to 375ºF/190ºC.
In the blender jar, put all filling ingredients, including shrimp and mix until smooth.
With a rolling pin, roll pastry and cut into 24 7.5 cm X 7.5 cm (3 in. X 3 in.) squares.
Spoon about 15 mL (1 Tbsp.) filling per square. Crimp the edges to form a bundle.
Bake at 15 minutes.
Serve hot.

Suggestion

Cook scallops in a blend of white wine and fish stock. Bring cooking liquid to a boil and add scallops. Remove pan from the heat and let stand 2 to 3 minutes.
