Recipe ingredients

  • 1 lb. (450 g) fresh scallops
  • 4 fresh mushrooms, quartered
  • 2 Tbsp. (30 mL) tarragon vinegar
  • 1/2 cup (125 mL) cashews*
  • 1/2 cup (125 mL) canned mandarins, drained
  • 1 cup (250 mL) chinese fried vermicelli.

Preparation

In a pan, brown scallops and mushrooms in butter/oil about 2 minutes.
Add the rest of the ingredients except vermicelli and continue cooking 2 minutes.
Divide mixture among 4 plates and just before serving, sprinkle each plate with fried vermicelli.

Suggestion

For best results, wipe scallops well to remove as much humidity as possible.
