Recipe ingredients
- 1 lb. (450 g) fresh scallops
- 4 fresh mushrooms, quartered
- 2 Tbsp. (30 mL) tarragon vinegar
- 1/2 cup (125 mL) cashews*
- 1/2 cup (125 mL) canned mandarins, drained
- 1 cup (250 mL) chinese fried vermicelli.
Preparation
In a pan, brown scallops and mushrooms in butter/oil about 2 minutes.
Add the rest of the ingredients except vermicelli and continue cooking 2 minutes.
Divide mixture among 4 plates and just before serving, sprinkle each plate with fried vermicelli.
Suggestion
For best results, wipe scallops well to remove as much humidity as possible.Origin: Chinese
