Recipe ingredients
- 1 green or red pepper, finely chopped
- 2 green onions, finely chopped
- 1/2 cup (125 mL) diced celery
- 4 eggs
- 1/2 cup (125 mL) milk
- 1 tsp. (5 mL) butter
- 1/2 cup (125 mL) grated Swiss cheese
Preparation
In a frying pan, brown pepper, onions and celery. Season and cook
about 5 minutes. Set aside.
In a bowl, beat eggs with milk until smooth.
In another frying pan, melt butter and pour in the egg mixture. Cook over medium heat.
On half of the omelette, spread vegetables and cheese. Fold and serve.
Suggestion
When set around the edges, tilt the frying pan and gently lift omelette with a spatula to allow the liquid portion run under the cooked portion. Repeat as needed.Occasion: Brunch
