Recipe ingredients
- 8 eggs
- 1/4 cup (60 mL) milk
- 1/4 cup (60 mL) chopped fresh parsley
- 1/4 cup (60 mL) grated parmesan cheese
- 2 onions, minced
- 4 potatoes, peeled and minced
Preparation
In a bowl, beat eggs, milk, parsley and parmesan until smooth. Season and set aside.
In a frying pan, brown onions and potatoes 5 minutes an a butter/oil blend. Lower heat, cover and cook 15 to 20 minutes or until potatoes are cooked.
Pour egg mixture into the frying pan and stir. Cook another 10 minutes.
Turn the omelette over and cook 5 minutes more.
Fold in half and serve.
Suggestion
Just before folding the omelette in two, add strips of smoked ham.Occasion: Brunch
