Recipe ingredients
- 10 mushrooms, quartered
- 1 sweet red pepper, in strips
- 2 green onions, chopped
- 12 oz. (341 mL) canned asparagus, drained*
- 1/2 cup (125 mL) sliced black olives
- 12 eggs*
- 1/2 cup (125 mL) milk
- 1/2 cup (125 mL) cream cheese*
Preparation
Preheat oven to 350°F / 175°C.
In a frying pan, brown mushrooms, pepper and onions a few minutes in butter and oil. Season.
Spread vegetable mix in a lightly oiled overproof dish.
Add asparagus and black olives.
In a bowl, beat eggs and milk. Pour over vegetables.
Dot with cream cheese.
Bake 5 minutes at 350°F / 175°C.
Broil about 3 minutes.
Suggestion
Sprinkle with grated parmesan cheese before broiling.Occasion: Brunch
