Recipe ingredients
- 2 cups (500 mL) canned chick peas* drained and rinsed
- 1 cup (250 mL) cooked rice*
- 2 green onions, minced
- 1 green pepper, diced
- 1/4 cup (60 mL) celery, minced
- 1/2 cup (125 mL) raisins *
- 1/2 cup (125 mL) chopped fresh parsley
- 1/3 cup (80 mL) Honey Dijonnaise dressing *.
Preparation
In a salad bowl, combine all ingredients except dressing.
Add dressing and mix well.
Cover and let stand 1 hour in the refrigerator before serving.
Suggestion
For a more colourful chick pea salad, add 2 diced unpeeled green apples.Occasion: Lunch Box
