Recipe ingredients
- 1 1/2 cup (375 mL) chopped cooked chicken
- 3/4 cup (180 mL) mayonnaise
- Fresh chopped tarragon to taste
- 4 whole-wheat croissants, halved
- 4 leaves lettuce
- 1 fresh mango, thinly sliced
Preparation
In a bowl, combine chicken, mayonnaise and tarragon.
Spread the chicken mix on one half of the croissant.
Layer lettuce and mango slices.
Top with the other half of the croissant and serve.
Serve with carrot and celery sticks.
Suggestion
Garnish with lightly toasted slivered almonds.Occasion: Lunch Box
