Recipe ingredients
- 3 lb. (1.5 kg) lamb strip loin
- 1 cup (250 mL) water
- 1 stick of cinnamon cut into pieces
- 1 cup (250 mL) sugar
- 1 cup (250 mL) blanched sliced almonds
- 10 oz. (300 g) pitted dried prunes
- 2 Tbsp. (30 mL) butter
- Salt and pepper to taste
Preparation
In a large pot, sear the strip loin in oil and butter until golden. Remove and let rest.
Add the water, cinnamon, sugar and almonds to the pot. Bring to a boil, stirring.
Return the meat to the pot. Simmer, covered, for 45 minutes.
Add the prunes and cook for 10 more minutes, stirring.
Lamb is cooked when it is tender and easily pierced with the tip of a knife.
Suggestion
Dried prunes can be replaced with other dried fruits such as apricots, dates or even figs.* We recommend Selection and Irresistibles products.
