Recipe ingredients

  • 2 leeks, minced
  • 2 lb. (1 kg) lamb shoulder, bone-in
  • 2 cloves
  • To taste mild prepared mustard
  • Salt and pepper to taste
  • 4 large potatoes quartered
  • 1 tsp. (5 mL) dried marjoram
  • 2 sprigs thyme
  • 2 bay leaves
  • 2 cups (500 mL) chicken broth
  • 2 lemons fresh lemon juice

Preparation

Preheat the oven to 205*C/400*F.
Cover the bottom of a braising pan with the minced leeks.
Insert garlic slivers in the lamb shoulder.
Season and baste with mustard.
Place the lamb on the leeks and spread the potatoes around the meat. Sprinkle with herbs.
Pour broth over up to half the height of the meat. Drizzle with the lemon juice.
Cover and roast in the oven 1 hour at 205*C/400*F.
Uncover and finish cooking at 180*C/350*F for 15 to 20 minutes.

Suggestion

Calculate 200 g of meat (bone-in) or 150 g (boneless) per person.
