Recipe ingredients
- 1 onion, (1 onion) chopped
- 1 clove garlic, chopped
- 2 Tbsp. (30 mL) extra light olive oil
- 1 Tbsp. (15 mL) peanut oil
- 2 1/4 cups (560 mL) kidney beans
- 1 tsp. (5 mL) chili powder
- Pepper to taste
- 1 cup (250 mL) grated cheddar cheese
Preparation
In a very hot frying pan, brown the onion and the garlic in olive and peanut oils. Add beans and the chili powder; fry 5 to 6 minutes, stirring constantly.
Add pepper and simmer 2 minutes over medium heat.
Sprinkle with cheese and serve.
