Recipe ingredients
- 2 Tbsp. (30 mL) Irresistibles extra virgin olive oil *
- 20-30 large scampi, shelled and deveined
- 3 green onions, chopped
- 2 cloves garlic, chopped
- 1/2 cup (125 mL) dry white wine
- 6 large tomatoes, peeled, seeded and chopped
- 2 Tbsp. (30 mL) chopped fresh thyme
- Salt and pepper to taste
Preparation
Heat oil in a pan. Add scampi and brown 2 minutes over high heat. Set aside.
In the same pan, cook shallots and garlic 1 minute over medium heat.
Add wine and cook 2 more minutes.
Add remaining ingredients and continue to cook over low heat 6 to 8 minutes.
Return scampi to pan, stir well and simmer 2 minutes. Serve.
