Recipe ingredients

  • 3 lb. (1,5 kg) boneless lamb shoulder
  • 1/4 cup (60 mL) liquid honey
  • Stuffing
  • 1/2 cup (125 mL) green onions, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 Tbsp. (15 mL) chopped fresh herbs (sage, basil, mint)
  • 1 lb. (450 g) ground lamb
  • Salt and pepper to taste

Preparation

In a glass bowl, mix all the stuffing ingredients thoroughly. Salt and pepper.
Stuff the boneless shoulder. Roll the shoulder into a roast and tie it.
Let the stuffed shoulder rest for 2 hours in the refrigerator.
Preheat the oven to 180ºC/350ºF.
Place the stuffed lamb in a roasting pan and baste it with honey on all sides.
Roast in the oven, uncovered, at 180ºC/350ºF for about 2 hours, basting often during the cooking. The meat thermometer should read 70ºC/160ºF for a medium roast.

Suggestion

The honey gives the shoulder a Caramelized coating that boosts its flavour and keeps in the juices.
