Recipe ingredients
- 1 tsp. (5 mL) dehydrated parsley
- 1/4 cup (60 mL) all purpose flour
- 1 1/3 lb. (625 g) halibut steaks
- 3 Tbsp. (45 mL) extra virgin olive oil
- 3 Tbsp. (45 mL) capers, drained
- 4 Italian tomatoes, diced
- 3 Tbsp. (45 mL) fresh basil, chopped
- Salt and pepper to taste
Preparation
Mix the parsley and flour.
Coat the halibut steaks with the flour mixture.
Heat the oil in a frying pan and brown the steaks for 1 to 2 minutes on each side.
Pour the caper, tomatoes and basil over the halibut steaks. Salt and pepper.
Cook covered in the oven at 180°C (350 °F), for 5 to 6 minutes.
Suggestion
To flavour the fish, add fresh chopped oregano to the flour. To bring out the flavour of the sauce, add a thread of Espelette pepper at the end of cooking.* We recommend Selection and Irresistibles products.
