Recipe ingredients

  • 2 cups (500 mL) dry white wine
  • 10 cups (2.5 L) water
  • 1/2 cup (125 mL) cider vinegar
  • 1 sliced onion
  • 1 sliced carrot
  • 3 cloves
  • 1/4 tsp. (1 mL) thyme
  • Salt and pepper

Preparation

Put all the ingredients in a pan and bring to a boil. Simmer for 20 minutes, skimming often. Strain and cool.
Cook fish.
