Recipe ingredients

  • 4 trout fillets
  • 2 Tbsp. (30 mL) butter*
  • Salt and pepper to taste
  • 1 Tbsp. (15 mL) finely chopped fresh ginger
  • 1/4 cup (60 mL) orange juice*
  • 1 Tbsp. (15 mL) brown sugar*
  • 1 Tbsp. (15 mL) zest of lime
  • 1 Tbsp. (15 mL) zest of lemon
  • 2 oranges, peeled and chopped

Preparation

Heat the butter in a frying pan. In it, grill the fillet for about 3 minutes on each side. Add salt and pepper.
Remove the fillets from the pan and keep them warm.
Place all other ingredients in the frying pan.
Cook the sauce for 2 to 5 minutes, while stirring. Add the chopped oranges at the end of cooking.
Cover the trout fillets with the sauce.

Suggestion

Cook the trout on its side to keep it moist.
