Recipe ingredients
- 2 tsp. (10 mL) olive oil
- 4 x 4-oz (125-g) salmon fillets each, skin removed)
- 1/4 cup (60 mL) dry white wine
- Spinach sauce and yoghurt
- To taste salt and ground pepper
Preparation
Pour the oil into a casserole dish. Add the salmon fillets, turning them to coat them with oil. Salt and pepper. Pour the wine around the salmon fillets
Cook in an oven preheated to 190°C (375°F) for13 to 18 minutes or until the salmon flesh is opaque in the centre and comes apart easily with a fork. Remove the fillets from the oven. Put them in serving plates and coat them with spinach and yoghurt sauce. Serve immediately.
Suggestion
To prevent the salmon from hardening, do not overcook it. To vary the flavour of the sauce, replace all or part of the fresh spinach with sorrel. The latter has a slightly lemony flavour, which marries with salmon, perfectly.* We recommend Selection and Irresistibles products.
