Recipe ingredients

  • 1/3 lb. (150 g) fresh bacon cut into small pieces
  • 1 lb (450 g) beef heart, fat and connective tissue (if any) trimmed, cut into cubes and floured
  • 2 carrots, diced
  • 18 small onions
  • 3 cups (750 mL) beef broth or red wine
  • 1 Tbsp. (15 mL) tomato paste
  • 2 bay leaves
  • 2 sprigs of fresh thyme
  • Salt and pepper to taste

Preparation

Sauté the bacon in a frying pan.
Add the floured cubes of beef heart and cook them to a nice colour.
Add the carrots and the small onions and continue cooking for 3 to 4 minutes.
Pour in the beef broth and add the bay leaf and the thyme. Salt and pepper.
Bring to a boil, cover and simmer for 2 hours or until the meat is tender.
20 minutes before the end of the cooking time, add the tomato paste.

Slow and prolonged cooking in liquid ensures that the beef heart will be tender and flavourful.
