Recipe ingredients

  • 2 Tbsp. (30 mL) vegetable oil
  • 3 lb. (1.36 kg) chicken breasts and thighs, in chunks
  • 1 Tbsp. (15 mL) grated fresh ginger
  • 1/2 tsp. (1 mL) hot pepper sauce
  • Zest of one orange
  • Vegetable oil for frying

Preparation

Pour oil in a deep-fryer, heat to 275OºF or 130OºC, check with a thermometer.
Cook a few pieces of chicken at a time until no longer pink.
Remove and drain on paper towels.
Heat 2 Tbsp. (30 mL) oil in a pan, add ginger, hot pepper sauce and the zest of orange, cook three minutes.
Add the orange sauce.

Suggestion

Arrange chicken on a platter, cover with orange sauce. Garnish with orange sections. Serve with water chestnuts.
