Recipe ingredients

  • 1 Tbsp. (15 mL) oil
  • 1 onion, cubed
  • 1 clove garlic, chopped
  • 1 lb. (450 g) ground veal
  • 1/2 lb. (225 g) ground ham
  • 1 tsp. (5 mL) Cayenne
  • 1 tsp. (5 mL) ground rosemary
  • 4 pears, peeled and cubed
  • Juice and zest of one lime
  • 1/4 cup (60 mL) 35% M.F. cream
  • 2 Tbsp. (30 mL) chicken concentrate
  • 6 bread slices, cubed
  • Salt and pepper
  • 6 sheets filo pastry
  • 2 Tbsp. (30 mL) oil or butter

Preparation

In a frying pan, brown oil, onion and garlic.
Add veal, ham, Cayenne, rosemary, pears, juice and zest of lime.
Cook over medium heat 10 to 15 minutes.
In a bowl, combine cream, chicken concentrate, bread, salt and pepper.
Mix well to form a batter and pour over the meat.
Adjust seasoning and cool.
Take six sheets of filo, oil or butter each sheet and layer on top of the other.
Spread the filling and shape into logs; bake on a baking sheet at 400°F/205°C 20 minutes.
Cool an serve diagonally sliced.

Suggestion

Serve with your choice of fruit coulis.
