Recipe ingredients

  • 4 Bartlett pears
  • 2 cups (500 mL) water
  • 1/2 cup (125 mL) sugar *
  • 1/2 lemon
  • 1/4 tsp. (1 mL) vanilla
  • 1/2 cup (125 mL) 35% M.F. cream
  • 1 Tbsp. (15 mL) icing sugar
  • 8 tulip-shaped wafers or regular wafer
  • 4 maraschino cherries, cut in 2

Preparation

Peel pears, cut in half and core. In a pan, put water, sugar, lemon half and vanilla, bring to a boil.
Poach in boiling syrup 5 minutes.
Cool on paper towels.
Whip cream to peaks.
Fold in icing sugar.
Fill each wafer with whipped cream, top with a pear half.
Garnish with a half cherry.
Refrigerate
