Recipe ingredients
- 1 cup (250 mL) chopped onion
- 1 Tbsp. (15 mL) butter
- 1 Tbsp. (15 mL) oil
- 1 1/3 cups (325 mL) sliced mushrooms
- 1 1/3 lb (600 g) dogfish steaks, cut in 1-in. (2.5-cm) cubes
- 2 cups (500 mL) plain 2% yogurt
- 2 Tbsp. (30 mL) dry white wine
- 2 tsp. (10 mL) lemon juice
- 1 tsp. (5 mL) prepared mustard
- 1/4 tsp. (1 mL) basil
- Salt and pepper to taste
Preparation
Sauté onion in oil and butter until glassy.
Add mushrooms and brown 2 to 3 minutes. Remove and set aside.
In the same frying pan, brown cubed dogfish 3 to 4 minutes stirring gently, until flesh loses its sheen. Set aside.
Combine remaining ingredients in a saucepan with onions and mushrooms. Season and bring to a boil.
Add dogfish and heat.
Suggestion
Rinse shark under cold water and soak it in water and lemon juice 4 hours before cooking to enhance its flavour.Never cook shark with the skin on.
