Recipe ingredients
- 4 fresh sole fillets, 4 oz (120 g) each
- Basting Sauce
- 1/4 cup (60 mL) unsweetened orange juice
- 1 Tbsp. (15 mL) extra virgin olive oil
- 2 Tbsp. (30 mL) lemon juice
- Salt and pepper to taste
- Fruit sauce
- 3/4 cup (180 mL) unsweetened orange juice
- 1 Tbsp. (15 mL) cornstarch
- 10 oz (284 mL) canned mandarins, drained
Preparation
Preheat oven to 220°C/450°F.
Combine basting sauce ingredients in a glass bowl.
Baste fillets and season.
Bake at 220ÝC/450ÝF for 12 to 15 minutes or until flesh loses its sheen.
Meanwhile, mix cornstarch and orange juice.
Thicken cornstarch and orange juice over medium heat in a saucepan.
Gently stir in mandarins.
Pour fruit sauce over fillets.
